Whole Fish
Our fish are caught with bottom hook and line in the Bay of Fundy. We "dress" the fish as soon as they come out of the water (which means we bleed and gut them), and then we chill the fish in a mixture of ice and salt water until they are delivered to you. The fish is a mixture of cod, haddock, and hake.
