MOIST BAKED HADDOCK
1 lb. Haddock
Low fat or regular mayonnaise
1 lemon
¼ cup margarine or butter, melted
Pepperidge Farm stuffing mix
Preheat oven to 400°.
Rinse and cute fish into serving size pieces.
Butter the bottom of casserole dish.
Coat both sides of fish with mayonnaise.
Roll coated fish into stuffing mix.
Squeeze juice of 1 lemon into melted butter.
Pour evenly over top of fish.
Bake for 20 minutes.
Serves 2.
